Curry chicken is a flavorful and hearty dish with many variations across different cuisines. Here's a basic step-by-step guide to making a simple and delicious curry chicken.


  • 1.5 pounds (680g) of boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

  • 2 tablespoons vegetable oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece of fresh ginger, minced

  • 2 tablespoons curry powder (adjust to taste)

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon chili powder (adjust to taste)

  • 1 can (14 ounces) diced tomatoes

  • 1 can (14 ounces) coconut milk

  • Salt and pepper to taste

  • Fresh cilantro leaves for garnish (optional)

Step 1: Prepare the Chicken

  1. Cut the chicken into bite-sized pieces. Season with salt and pepper.
