Lamb chops with French fries


  • 4 lamb chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced.

  • 1 teaspoon fresh rosemary (or 1/2 teaspoon dried rosemary)

  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

  • Salt and pepper, to taste


1. Prep the Lamb Chops:

  • Take the lamb chops out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps ensure even cooking.

2. Season the Lamb Chops:

  • Preheat your oven to 400°F (200°C).

  • In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper. This creates a flavorful marinade.

  • Rub the marinade mixture all over the lamb chops, ensuring they're well coated. Let them sit for a few minutes to absorb the flavors.

3. Sear the Lamb Chops:

  • Heat a skillet or ovenproof pan over medium-high heat. Add a small amount of olive oil to prevent sticking.

  • When the pan is hot, carefully add the lamb chops. Sear them for about 2-3 minutes on each side, or until they develop a nice brown crust. This step helps lock in the juices.

4. Finish in the Oven:

  • If you're using an ovenproof pan, you can transfer it directly to the preheated oven. If not, transfer the seared lamb chops to a baking dish.

  • Roast the lamb chops in the oven for 10-15 minutes for medium-rare (adjust the cooking time according to your preferred doneness).

5. Rest the Lamb Chops:

  • Remove the lamb chops from the oven and transfer them to a plate. Cover them loosely with aluminum foil and let them rest for about 5 minutes. This allows the juices to redistribute and keeps the chops juicy.

6. Serve:

  • Serve the lamb chops hot, garnished with fresh herbs if desired. You can pair them with side dishes like mashed potatoes, roasted vegetables, French fries, or a simple salad.
