Instructions:
1. Prepare the Beans:
a. Rinse the dried beans in cold water, removing any debris or stones.
b. In a large pot, combine the beans and 4 cups of water. Bring to a boil.
c. Reduce the heat to a simmer, cover, and cook for about 1-2 hours (or follow the instructions on the bean package) until the beans are tender. You may need to add more water while cooking.
d. Once the beans are cooked, drain them, and set them aside.
2. Cook the Rice:
a. Rinse the rice in cold water until the water runs clear. This removes excess starch.
b. In a separate pot, heat the vegetable oil over medium heat.
c. Add the chopped onions and garlic and sauté until they become translucent.
d. Add the rinsed rice to the pot and stir for a few minutes to coat it with the oil and onions.
e. Add 2 cups of water, or as needed, to cover the rice. Season with salt and pepper and add any optional seasonings like cumin, paprika, oregano, tomatoes, and a bay leaf.
f. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
3. Combine Rice and Beans:
a. Mix the cooked rice and beans in a large bowl.
b. Adjust the seasoning with salt, pepper, and any additional seasonings, if necessary.
4. Serve:
a. Serve the rice and beans hot, either as a main dish or as a side.
5. Optional Toppings:
a. Top with sliced avocado, chopped fresh cilantro, salsa, sour cream, or grated cheese as desired.
